Fruit Base

  • 2 cups papaya (cubed)
  • cups strawberries, hulled and sliced
  • 1 cup evaporated milk
  • ¾ cup full-fat coconut milk (or almond milk if preferred)
  • 1 tsp vanilla extract

Optional Flavor Boost

  • A pinch of cinnamon
  • A squeeze of lime juice

Instructions
 

  • First, prep your fruit. Peel and cube the papaya, then hull and slice the strawberries. The riper your fruit, the sweeter and more flavorful your popsicles will be.
  • Next, add all your ingredients to a blender: the papaya, strawberries, evaporated milk, coconut milk (or almond milk), vanilla, and that optional touch of cinnamon or lime juice if you’re using it.
  • Then, blend everything on high until the mixture is completely smooth and creamy.
  • Give it a quick taste. If your fruit wasn't super ripe, you might want to add a tiny splash of honey or maple syrup, but it’s totally optional.
  • Now, pour the mixture into popsicle molds. Tap the molds gently on the counter to release any air bubbles, then insert your popsicle sticks.
  • Finally, freeze for at least 6 hours, or overnight, until completely solid.
  • When you're ready to enjoy them, run the outside of the molds under warm water for a few seconds and they’ll pop right out.
