Easy Golden Tomato Mozzarella Toast
This Tomato Mozzarella Toast is crispy, cheesy, and packed with juicy tomatoes and fresh basil. It’s an easy option for breakfast, lunch, or a quick snack.

Ingredients for Tomato Mozzarella Toast
- Bread: A crusty baguette or Japanese milk bread works best for that crunchy base.
- Cherry Tomatoes: Fresh is best, giving a sweet and tangy flavor.
- Fresh Basil: Torn just before use for that aromatic, peppery kick.
- Fresh Mozzarella: High-quality mozzarella for that creamy, melt-in-your-mouth texture.

Recipe Variations
Try adding avocado, arugula, or balsamic glaze, or swap the mozzarella for feta or goat cheese.
Prepare the Mozzarella and Tomatoes
Slice the tomatoes into thick, even slices. Tear or slice the mozzarella, depending on its size, then set everything aside for assembling the toast. If you have baby mozzarella, just tear it apart for the mozzarella.

How to Make Tomato Mozzarella Toast in the Oven
Preheat the oven to 375°F (190°C). Layer the tomatoes, mozzarella, and basil over the bread, then wrap in foil and bake for 10–15 minutes, until the cheese is melted and the bread is crisp. Also, check out my guide on Making Toast In The Oven.

Keesha’s Tips & Tricks
- Use fresh mozzarella: It melts beautifully and gives the toast a creamy texture.
- Toast the bread first: A quick pre-toast helps prevent a soggy base.
- Don’t overcrowd: Keep the toppings in an even layer so the bread stays crisp.

What to Serve with Tomato Mozzarella Toast
Serve it with a fresh salad, tomato soup, or grilled chicken for a simple, satisfying meal.
Storage and Leftovers
Tomato mozzarella toast is best eaten fresh. Store leftover toppings separately in the refrigerator and assemble fresh toast when ready to eat.

Deliciouse Pesto Mozzarella Toasts
Ingredients
- 4 slices of your preferred toast bread
- 2-3 Tbsp pesto (adjust based on preference)
- ½ cup Mozzarella cheese, finely sliced (or pre-sliced mozzarella), enough to cover 2 slices of bread
- Fresh basil leaves
- pepper, to taste
- Paprika, to taste
- 2 tsp butter, for frying
- 1 egg yolk (opptional)
Instructions
- Spread a generous amount of pesto on one side of each bread slice. On two of the slices, layer the mozzarella cheese evenly to cover the pesto.
- Add fresh basil leaves on top of the mozzarella, followed by the thinly sliced red pepper. A sprinkle of paprika adds an extra layer of flavor.
- Place the remaining bread slices, pesto side down, on top of the prepared layers to form two sandwiches.
- In a skillet, melt a teaspoon of butter over medium heat. Once hot, add the sandwiches. Press them down gently to ensure even contact with the skillet.
- Cook for about 3-4 minutes on each side, or until the bread is golden brown and the mozzarella has melted beautifully. Flip carefully to cook both sides evenly.
- Optional: For an extra indulgent variation, before frying, dip each assembled sandwich into beaten egg yolk, ensuring a light coating. This adds a rich, savory dimension to it.
- Remove the toasties from the skillet and let them rest for a brief moment on a cutting board. Then, slice each sandwich diagonally to create two halves.
- Serve the warm and crispy Pesto Mozzarella Toasties immediately, and enjoy the delightful combination of melted cheese, aromatic basil, and the satisfying crunch of perfectly toasted bread.
