Ingredients
  

  • 4 slices of your preferred toast bread
  • 2-3 Tbsp pesto (adjust based on preference)
  • ½ cup Mozzarella cheese, finely sliced (or pre-sliced mozzarella), enough to cover 2 slices of bread
  • Fresh basil leaves
  • pepper, to taste
  • Paprika, to taste
  • 2 tsp butter, for frying
  • 1 egg yolk (opptional)

Instructions
 

  • Spread a generous amount of pesto on one side of each bread slice. On two of the slices, layer the mozzarella cheese evenly to cover the pesto.
  • Add fresh basil leaves on top of the mozzarella, followed by the thinly sliced red pepper. A sprinkle of paprika adds an extra layer of flavor.
  • Place the remaining bread slices, pesto side down, on top of the prepared layers to form two sandwiches.
  • In a skillet, melt a teaspoon of butter over medium heat. Once hot, add the sandwiches. Press them down gently to ensure even contact with the skillet.
  • Cook for about 3-4 minutes on each side, or until the bread is golden brown and the mozzarella has melted beautifully. Flip carefully to cook both sides evenly.
  • Optional: For an extra indulgent variation, before frying, dip each assembled sandwich into beaten egg yolk, ensuring a light coating. This adds a rich, savory dimension to it.
  • Remove the toasties from the skillet and let them rest for a brief moment on a cutting board. Then, slice each sandwich diagonally to create two halves.
