These pumpkin waffles are made with real pumpkin puree and a simple pumpkin pie spice mixture. The versatility comes in how you serve them. I made these this morning with chocolate chips, maple syrup, and toasted pecans. I know, not the healthiest, but sometimes breakfast can be dessert!

Choosing The Best Pumpkin Purée To Make Pumpkin Waffles

Pumpkin purée is obviously the most important part of this recipe. So, choosing the best option will majorly affect the final pumpkin flavor.

First, you have the option to make pumpkin puree from scratch (or you can use leftover pumpkin puree). This does take some time, but is the least processed option and will arguably have the best flavor.

Next, you can also choose canned pumpkin puree. These will have a slightly less pumpkin-like flavor but offer a ton of convenience. You can also sometimes find canned pumpkin puree with pumpkin pie spice already incorporated in the mixture.

Whichever you choose, make sure that it isn’t too watery. This will affect the wet-to-dry ingredient ratio of your pumpkin spice waffle recipe and ultimately, the texture of them once cooked in the waffle iron.

Can You Make Your Own Pumpkin Spice?

Making a pumpkin pie spice mix from scratch is honorable, but not necessary. There are many pumpkin spice mixes out there already that have a fantastic flavor.

These pumpkin spice waffles are already pretty close to being vegan. The only ingredients you have to substitute include the eggs and melted butter.

For the eggs, you can use vegan eggs made from chia seeds or flaxseeds. There are many tutorials out there, but I like this one. You can also buy premade vegan egg substitutes, but these are often heavily processed and artificial.

For the melted butter, you can opt for melted margarine or a different kind of plant-based butter, like almond butter. You can also use coconut oil.

I’ve already incorporated oat milk in this recipe, not necessarily to make it vegan, but because it compliments the pumpkin flavor and pumpkin spice flavor very well.

You can use other kinds of plant-based milk like almond milk, cashew nut milk, or coconut milk.

There are some ingredients that you should double-check. You’d be surprised to find how many plant-based ingredients have been processed using animal products and animal by-products.

Check the brown sugar, baking powder, and wheat flour. You should also read the ingredients in your canned pumpkin. Some brands include animal-based stabilizers and flavor enhancers.

For these pumpkin waffles, I used regular all-purpose wheat flour. I also often use whole wheat flour as a healthier alternative. Obviously, both of these contain a ton of gluten in there.
