Homemade Oreo Ice Cream Sandwich
Today, I will show you how to make these drool-worthy, refreshing Oreo ice cream sandwich recipes. It’s made with an uber-crunchy Oreo cookie base, a soft and creamy chocolate ganache layer, and finally, a rich vanilla ice cream filling.
This combination of textures and flavors creates a deliciously sweet dessert that everybody will become obsessed with! It’s easy, and although it takes a little while to make, worth every minute!

Do I Need An Ice Cream Maker?
This is always the question I get asked first when making homemade ice cream: do you need an ice cream maker?
In short, no! This is not a churned ice cream and the base liquid will set unagitated. While this does mean the ice cream won’t be as fluffy, it will help the Oreo ice cream sandwich hold its shape a lot better.

How To Make Oreo Ice Cream Sandwiches
Blend the Oreo. Line a 9×13 baking pan with parchment paper. Set Aside. Blend Oreo cookies into fine crumbs; set aside ½ cup.
Mix the Oreo and Butter. Combine crushed Oreos with melted butter to form a crumbly mixture. Spread half of the Oreo crust in the pan and freeze.
Make the Chocolate Ganache. Mix chocolate chips, salt, and vanilla in a bowl. Heat cream until steaming; pour over chocolate. Wait 5 minutes, then whisk into a smooth mixture. Pour half of the ganache over the crust; freeze.
Whip and Mix. Whip cream and vanilla until peaks form; fold in condensed milk and reserved Oreos.
Layer the Cream and Ganache. Spread whipped Oreo cream over the ganache layer; freeze for 5 hours. Pour the remaining ganache over the cream; top with reserved Oreo crumbs. Freeze for an additional 3 hours or overnight.
Lift sandwiches using parchment paper; slice into squares.
How To Make Vegan Ice Cream Sandwiches
To start, Swap the butter in the crust with margarine or nut butter.
Then replace the whipped cream and sweetened condensed milk in the ice cream base with vegan alternatives. For the whipped cream alternative, I would suggest vegan egg whites or using aquafaba liquid.
Good news – Oreos are vegan! For the ganache, use vegan chocolate and plant-based cream like coconut cream.
How To Make Dairy-Free Oreo Ice Cream Sandwiches
To make your Oreo ice cream sandwich dairy-free is a lot easier than making it vegan.
Simply substitute the melted butter, whipping cream, whipped cream, and chocolate.
You can use easy alternatives like margarine, aquafaba liquid, and dairy-free or vegan chocolate. There are, of course, many other alternatives you can use. These are just the easiest to find.
What Else Can I Add To These Ice Cream Sandwiches?
There are three main changes I make to this delicious Ice Cream Sandwich recipe:
Change The Oreo Cookie Crust
While Oreo cookies are delicious enough, I often swap them out for a different kind or even flavor.

Change The Ice Cream Flavor
The ice cream base is pretty easy to make and only requires whipped cream, vanilla extract, sweetened condensed milk, and Oreo cookie pieces. This creates a neutral base that is easy to manipulate.
I sometimes add 1/4 – 1/3 cup cocoa to give it a more chocolatey taste. You can also add smooth peanut butter.
Adding different flavors of extracts is also pretty easy and helps increase versatility. I would remove the vanilla extract from the recipe to be safe. You can use orange extract (with some orange zest), peppermint extract, cherry extract – the list goes on and on.
Add Toppings Or Garnishes

How To Store Oreo Ice Cream Sandwiches In The Freezer
You can wrap your ice cream sandwiches in plastic wrap, then place them inside an airtight container. Store these sandwiches inside the freezer for up to 3 months.
To add an extra layer of protection against freezer burn, wrap the container or individual sandwiches with foil as well.
Tips And Tricks For Making The Best Oreo Ice Cream Sandwiches
- You HAVE to line the baking pan with parchment paper or wax paper. This helps get the ice cream sandwich out of the baking sheet much more easily. Do not use plastic wrap because it will tear when you lift the ice cream sandwich. Also, don’t use aluminum foil because it will give the ice cream a metallic taste and might discolor it.
- Make sure that the Oreo cookies are finely crushed to get a flat “cookie” layer. If the Oreo cookie pieces are too chunky, your crust mixture won’t hold together well.
- Always use heavy whipping cream when you are making ice cream. First, the high-fat content makes the ice cream much more creamy and gives it a luxurious mouthfeel. Secondly, cream with a fat content over 30% helps prevent ice crystals from forming in the mixture. This is especially important for this recipe, which doesn’t require churning.
- This recipe for ice cream sandwiches is a lengthy one, but not a labor-intensive one. Be patient and wait for the Oreo layers, ganache, and ice cream layers to set before adding the next layer.
FAQs
If you have a different-sized pan, you may need to adjust the quantity of your Oreos, ganache, and ice cream base. If the pan is slightly larger, your layers will just be thinner – you don’t have to adjust the amount. But, if you have a significantly bigger pan, you may want to make a 1 1/4 or 1 1/2 recipe.
I’ve always been confused by this question, but it’s one I get a lot. You eat an Oreo ice cream sandwich just like you would a regular sandwich – with your hands. Sure, it may become a little messy once the ice cream starts melting, but that’s why I like to make my Oreo ice cream sandwiches small.
You can, but why would you want to? This ice cream base is uber-creamy and delicious, and doesn’t contain unnecessary add-ins. If you do use store-bought ice cream, make sure you soften it slightly before spreading it over the layer of ganache. You can even melt it completely and re-set it in the freezer.

For Oreo Crust
- 50 Oreos, finely crushed (reserve ½ cup for ice cream filling)
- ¾ cup unsalted butter, melted
For Chocolate Ganache
- 2 cups semi-sweet chocolate chips
- 1 cup heavy whipping cream
- ½ teaspoon salt
- 1 teaspoon vanilla extract
For Ice Cream Filling
- 2 cups heavy cream
- 1 tablespoon vanilla extract
- ½ cup sweetened condensed milk
- ½ cup crushed Oreos (reserved from crust ingredients)
Instructions
Mix the Oreo and Butter
- Start by Line a 9×13-inch baking dish with parchment paper for easy removal of the sandwiches.
- Then in a food processor, pulse Oreos to a fine consistency. Save ½ cup of the crumbs for later. In a mixing bowl, combine the remaining Oreos with melted butter and mix until a crumbly mixture forms. Press half of this mixture into the prepared baking dish, creating an even layer. Freeze while preparing the ganache.
- Next, combine chocolate chips, salt, and vanilla in a mixing bowl. Heat heavy cream in a pot until steaming but not boiling. Pour over the chocolate mixture and let sit for 5 minutes to melt the chocolate. Whisk slowly until smooth and combined.
- Remove the crust from the freezer and pour half of the ganache over it, spreading evenly with a spatula. Return to the freezer.
Prepare Ice Cream Filling
- In a large bowl, whip heavy cream and vanilla with a hand mixer until thick and peaks form. Gently fold in sweetened condensed milk until smooth. Add the reserved ½ cup crushed Oreos and fold to combine.
- Spread the whipped Oreo cream over the frozen ganache layer evenly. Freeze for 5 hours.
Final Layers
- Spread the remaining ganache over the cream layer. Sprinkle the rest of the Oreo crumbs on top, pressing gently to adhere. Freeze for 3 more hours or overnight.
- Then Lift the entire block out of the pan using the parchment paper. Cut into squares with a knife dipped in hot water for smooth slicing.
