You can use my recipe and add a ton of breakfast quesadilla fillings. This is an incredibly versatile dish, which is part of why my family loves it so much! There are two main variations I frequently make.
Spinach Breakfast Quesadilla Recipe
First, I’ll explain the more labor-intensive version. But don’t worry, it’s still easy and quick!
To start, you need to dice the tomatoes and onions. They will help create a less chunky and textured omelet. I found that kids like this version more because they can’t see the onions and tomatoes.
You can even add some taco seasoning over the eggs as they cook. It creates a more Mexican-styled breakfast quesadilla.
Then, once the omelet is cooked and you flip it on the tortilla side, you can add the toppings. For this version, I add washed baby spinach and avocado slices.
Bacon Guacamole Breakfast Quesadilla
For this version, I add the eggs to the frying pan with diced onion, cooked bacon pieces, and red bell pepper. Then, I also put in some shredded spinach leaves.
You can then proceed to cook the breakfast tortilla as per my instructions in the original recipe. The toppings are the only thing that changes.
You can add cheese, baby spinach leaves, and delicious homemade guacamole with red bell pepper. I also love adding sweet sliced cherry tomatoes.

- 2 large eggs, room temperature
- Fine salt, to taste
- Freshly ground black pepper, to taste
- 1 tsp butter
- 1 tomato, sliced into roughly 3/4–inch slices
- 1/2 red onion, sliced
- 1 tortilla
- 3 tbsp grated cheese mix
- 2 large lettuce leaves
- 1/4 avocado, sliced

Instructions
- To start, crack two eggs inside a mixing bowl. Then, add some salt and freshly ground black pepper to taste.
