I love fusion breakfast foods. However, many of these items are admittedly not the easiest to eat. For example, a breakfast burrito made with scrambled eggs usually becomes a soggy wet mess that spills out on all sides.

So, I committed myself to developing the ultimate breakfast quesadilla recipe that is easy to eat, easy to make, and extremely versatile.

Essentially, I created a blend between an omelet and a quesadilla. Sounds good already, doesn’t it? This type of breakfast quesadilla recipe is far superior to others I’ve seen. The eggs and filling won’t fall out of the quesadilla, making it easier to eat and less messy (especially if you have kids).

Furthermore, the quesadilla is easier to handle and is visually a lot more appealing! No soggy scrambled eggs that make the tortilla wet. And no more filling spilling all over your table and floor!

And the reason I love these quesadillas the most is because of their versatility. Because of how you make them, you can add virtually any topping and filling your heart desires. They won’t fall out or create a messy plate.

Variations For My Breakfast Quesadilla Recipe

You can use my recipe and add a ton of breakfast quesadilla fillings. This is an incredibly versatile dish, which is part of why my family loves it so much! There are two main variations I frequently make.

Spinach Breakfast Quesadilla Recipe

First, I’ll explain the more labor-intensive version. But don’t worry, it’s still easy and quick!

To start, you need to dice the tomatoes and onions. They will help create a less chunky and textured omelet. I found that kids like this version more because they can’t see the onions and tomatoes.

You can even add some taco seasoning over the eggs as they cook. It creates a more Mexican-styled breakfast quesadilla.

Then, once the omelet is cooked and you flip it on the tortilla side, you can add the toppings. For this version, I add washed baby spinach and avocado slices.

Breakfast Quesadillas are made with beaten eggs, tomatoes, onions, and cheese.

Bacon Guacamole Breakfast Quesadilla

For this version, I add the eggs to the frying pan with diced onion, cooked bacon pieces, and red bell pepper. Then, I also put in some shredded spinach leaves.

You can then proceed to cook the breakfast tortilla as per my instructions in the original recipe. The toppings are the only thing that changes.

Ingredients
  

  • 2 large eggs, room temperature
  • Fine salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tsp butter
  • 1 tomato, sliced into roughly 3/4–inch slices
  • 1/2 red onion, sliced
  • 1 tortilla
  • 3 tbsp grated cheese mix
  • 2 large lettuce leaves
  • 1/4 avocado, sliced
  • Chopped parsley, for garnish

Instructions
 

  • To start, crack two eggs inside a mixing bowl. Then, add some salt and freshly ground black pepper to taste.
  • Beat the seasoned eggs very well to create a lump-free egg liquid.
  • Then, melt some butter in a non-stick frying pan over medium heat.
  • Add the thick tomato slices and onion sliced to the heated pan. Allow them to cook for about 3-5 minutes per side or until they have softened.
  • Next, pour over the seasoned egg mixture. Leave the eggs to cook for about 4-minutes over medium heat.
  • Add the tortilla on top of the eggs. Leave the eggs to cook for another 2-3 minutes, or until they are completely cooked through.
  • Place a plate directly on top of the tortilla. In one confident motion, flip the omelet onto the plate. Now, place the tortilla side back into the frying pan. Don't put the pan on any heat. The residual heat will cook the tortilla.
  • Sprinkle some grated mixed cheese over the cooked egg. Add your lettuce leaves and sliced avocado.
  • Fold the tortilla over to create your breakfast quesadilla recipe. Then, serve it immediately with some additional freshly chopped parsley.
