I always stand in front of the open fridge, hopelessly staring inside, as if something delicious will suddenly leap out at me! However, now I have an alternate option – my recipe for summer peach salad.

A salad with fruit (as opposed to a fruit salad) is a wondrous thing, but many people are skeptical – the fruit is technically out of place resulting in a sweet-savory combination that some cannot get behind. Salads are such a versatile meal, and fruit adds an extra dimension of flavor. Without seeming too pedantic, we already add some fruit to our salads in the form of tomato… but, no pressure!

Personally, I think honey or maple vinaigrettes are considerably sweeter than a salad dotted with chunks of fruit, so if you’re worried about the salad being too sugary, then try a mustardy dressing to balance the flavors.

Other fruits you can try in your salads are figs, cubes of juicy watermelon, maybe some slivered strawberries, grapes or orange. There are so many options, but my favorite is without a doubt a downy ripe peach blushing pink.

Peaches make this salad so refreshing, especially if the peach season is in its prime, and you will know if it is because the crates of peaches at the grocery store will be omitting the sweetest scent, and you won’t be able to resist buying a tray-full.

What are your favorite vegan ingredients to add to a salad?

Mine are definitely sweet cherry tomatoes and creamy avocado – especially when they are summer-ripe, the tomatoes are plum and juicy, and the avocado is pristine, bruise-free and melt-in-the-mouth. Who can say no to avocado so perfect?!

My peach salad is 100% vegan because, at the peak of summer, all the fruits and vegetables are sublime. They are perfect. They don’t need any unnecessary garnishes, any cheese or creamy dressings, which can weigh down the lettuce and smother the crisp vegetables, so the intense freshness is lost.

Most peach salad recipes include goat cheese or feta, but I wanted my salad recipe to be vegan to emphasize the fruit’s flavor and keep all those fresh herbs light and crisp.

Feel free to add extra vegan ingredients to this peach salad – here are some ideas:

  • Spinach
  • Cucumber
  • Olives
  • Sundried tomatoes
  • Crusty bread – either fry some day-old baguette in oil and garlic for crispy croutons, or rip it up and toss in your dressing to soak up all the flavors like in a panzanella bread salad
  • Couscous or quinoa – add these grains depending on how hungry you are
  • Other summery herbs such as basil or oregano

Ingredients
 
 

FOR THE SALAD:

  • 1 pound Lettuce
  • 2 Peaches
  • 1 Avocado
  • 1 cup Cherry tomatoes
  • ¼ cup Parsley freshly chopped
  • ¼ cup Chives freshly chopped

FOR THE DRESSING:

  • 2 tablespoons Oil
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 tablespoon Peach syrup or peach-infused vinegar you can also use canned peach juice

Instructions
 

  • Cut all the vegetables and fruits into your desired shape and put everything in a big bowl.
  • Mix all the ingredients for the dressing and add it to the salad.
  • Serve it with some bread on the side.
