Ingredients for Kenyan Sukuma Wiki
For the Base: Kale with tomatoes, onion, and garlic. Spinach or collard greens also work.
For Cooking & Seasoning: Olive oil or ghee, salt, pepper, and a splash of water.
Optional Boosters: Chili for heat, curry or paprika for depth, and lemon juice or vinegar for brightness.

How to Make Sukuma Wiki
Heat olive oil in a skillet over medium heat. Cook the onion and garlic until soft, then add the tomatoes and let them break down slightly.
Stir in the kale, season with salt and pepper, add a splash of water, and cover. Cook until the kale is tender, then uncover and let any excess liquid cook off before serving.

- Don’t Overcook the Kale: Nobody likes soggy greens. I cook the kale until it’s tender but still has a little bite.
- Add Garlic at the Right Time: I toss in the garlic right after the onions soften. It keeps it from burning and gives the dish that mellow garlic flavor without bitterness.
- Keep Water Minimal: I only add just enough water to steam the greens. Too much makes them watery and bland.

Store cooked Sukuma Wiki in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop before serving.

Sukuma Wiki: A Delicious Kenyan Vegetable Dish
Ingredients
- 16 cups sukuma wiki (collard greens or kale) chopped
- 4 tablespoons vegetable oil
- 2 onions chopped
- 2 tomatoes chopped
- 1 cup water
- garlic
- salt
Instructions
- Put the vegetable oil and chopped onions in a pan.
- Sauté until the onions turn golden brown.
- Then add tomatoes and cook them until they soften.
- Next, add the sukuma wiki into the pan along with ½ cup water and some salt as per your taste.
- Now cook the mixture on a low flame for about 5 minutes. Your sukuma wiki should become tender and crunchy.
- You can enjoy this dish with ugali, rice or chapati. You can also add some meat to the dish if you prefer.
