Breakfast Quesadilla
Ingredients
- 2 Tbsp Unsalted Butter, for cooking
- 4 Eggs
- 2 large Flour Tortillas
- ½ cup shredded cheese
- ½ cup Spinach , fresh leaves, thoroughly washed and patted dry
- ½ cup Guacamole, freshly made
- Salt and freshly ground black pepper, adjusted to taste
Instructions
- Melt 1 tablespoon of butter in a non-stick pan over medium heat.
- Add the beaten eggs, seasoned with salt and pepper, to the pan. Let the eggs cook for a moment without stirring to let the bottom set. When the edges begin to firm, gently fold and flip the egg to cook thoroughly until fully set but still soft.
- While the eggs are cooking, take one large flour tortilla and use a heart-shaped cookie cutter to cut out three hearts. Set aside both the tortilla with heart-shaped holes and the cut-out pieces.
- Then Sprinkle half of the shredded cheese evenly over the eggs and add the tortilla on top. Let the cheese melt, then add a plate on top turn, and add it back to the pan.
- Next, sprinkle the remaining cheese over the turned tortilla, add a layer of fresh spinach leaves, and spoon homemade guacamole into it and fold it.
- Carefully flip the quesadilla so it's nicly golden brown on both side.
- Transfer the cooked quesadilla to a cutting board. If desired, add any additional toppings like more guacamole. Then cut it into three equal pieces. Serve immediately while warm and enjoy a breakfast
