Breakfast Quesadilla on white plate with salad

Breakfast Quesadilla

Keesha
The Ultimate Breakfast Quesadilla combines delicious eggs, melty cheese, and flaverful fillings inside a crisped tortilla. Its taste is a warm, comforting blend of creamy cheese and tender eggs, enriched by the savory or fresh notes of spinach and guacamole.

Ingredients

  • 2 Tbsp Unsalted Butter, for cooking
  • 4 Eggs
  • 2 large Flour Tortillas
  • ½ cup shredded cheese
  • ½ cup Spinach , fresh leaves, thoroughly washed and patted dry
  • ½ cup Guacamole, freshly made
  • Salt and freshly ground black pepper, adjusted to taste

Instructions

  • Melt 1 tablespoon of butter in a non-stick pan over medium heat.
  • Add the beaten eggs, seasoned with salt and pepper, to the pan. Let the eggs cook for a moment without stirring to let the bottom set. When the edges begin to firm, gently fold and flip the egg to cook thoroughly until fully set but still soft.
  • While the eggs are cooking, take one large flour tortilla and use a heart-shaped cookie cutter to cut out three hearts. Set aside both the tortilla with heart-shaped holes and the cut-out pieces.
  • Then Sprinkle half of the shredded cheese evenly over the eggs and add the tortilla on top. Let the cheese melt, then add a plate on top turn, and add it back to the pan.
  • Next, sprinkle the remaining cheese over the turned tortilla, add a layer of fresh spinach leaves, and spoon homemade guacamole into it and fold it.
  • Carefully flip the quesadilla so it's nicly golden brown on both side.
  • Transfer the cooked quesadilla to a cutting board. If desired, add any additional toppings like more guacamole. Then cut it into three equal pieces. Serve immediately while warm and enjoy a breakfast
