Dominican Maicena (Creamy Cornstarch Pudding) +(Video)
This Dominican maicena is warm, creamy, and so comforting. Evaporated milk, cinnamon, vanilla, and fresh lemon peel give this simple cornstarch pudding the sweetest homemade flavor.

💛 Jessica made this maicena for us at La Cocina de Keesha Studio. It’s one of those simple Dominican recipes that feels especially cozy served warm, with plenty of cinnamon and that little hint of lemon in every spoonful.

Tips & Tricks
- Dissolve the cornstarch first. Mixing it with a little water before it goes into the pot helps prevent lumps.
- Keep stirring. This is Jessica’s most important step. Stirring continuously gives the maicena that smooth, creamy texture.
- Watch the texture. The maicena will continue to thicken as it cooks, so remove it from the heat once it reaches a creamy pudding-like consistency.

How to Store
Store leftover maicena in an airtight container in the refrigerator for up to 3 days.
It will thicken more as it cools. When reheating, warm it gently and stir in a small splash of milk if you want to loosen the texture.
