Ingredients

For Dominican Maicena

  • 2¼ cups evaporated milk 354 ml
  • 4 Tbsp cornstarch / maicena
  • 3 cinnamon sticks
  • 1 Tbsp vanilla
  • Salt to taste
  • ¼ cup sugar to taste
  • 1 cup whole milk
  • Water a small amount for dissolving the cornstarch
  • 2 Tbsp butter
  • Peel of 2 lemons
  • Ground cinnamon for serving, optional

Instructions

How to Make Dominican Maicena

  • First, add the cornstarch to a bowl and mix it with a small amount of water until completely dissolved and smooth.
  • Next, pour the dissolved cornstarch into a pot. Add the cinnamon sticks and lemon peel and begin stirring so those flavors can start infusing the mixture.
  • Then, add the butter, a small pinch of salt, and the vanilla. Keep stirring as the butter melts.
  • Next, pour in the whole milk and continue stirring.
  • Then, add the sugar and gradually pour in the evaporated milk while stirring continuously.
  • After that, keep cooking and stirring over the heat as the maicena begins to thicken. Don’t stop stirring, especially once you notice it becoming creamier.
  • Finally, once the maicena is thick, smooth, and creamy, remove it from the heat. Serve it warm and finish with a little ground cinnamon on top if you like.
