Making Sopa Fria De Coditos the night before will give the pasta time to absorb the dressing. If your Sopa Fria De Coditos thickens up too much, you can always thin it out with 1-2 tablespoons of Mayonnaise.

Sopa Fria De Coditos is a cold pasta salad, so yes, the pasta should be rinsed. Rinsing the elbow macaroni will not only cool it down but will also get rid of excess starch that causes the pasta to stick together.

Sopa Fria De Coditos Ingredients
Sopa Fria De Coditos is a very versatile dish. You can use this recipe as a base and add any flavors you want to it. Although it is extremely delicious as it is, make it yours as you see fit.
Granulated Chicken Bouillon: Chicken bouillon seasons the water the pasta is boiled in.
Elbow Macaroni: Elbow macaroni is the pasta of choice for this recipe. It soaks up the dressing and absorbs its flavors. However, if you cannot find elbow macaroni, use any small tubular pasta.
Ham: I used ham for this recipe because it gives the Sopa Fria De Coditos a nice salty bite. However, you can substitute it for turkey if you don’t eat pork, and mushrooms if you’re looking for a vegan option.
Carrots: Carrots add a nice crunch and burst of sweetness to the recipe.
Celery: Celery also adds a crunchy texture to the pasta salad and gives it a subtle earthy flavor.
Corn: Corn adds a burst of sweetness to the Sopa Fria De Coditos.
Roasted Red Peppers: Roasted red peppers have an intensified sweetness, but they also have a slightly smoky flavor which enhances the salad’s flavor.
Pickled Jalapeños: Pickled jalapeños add a mild spicy flavor to the salad. The robust vinegary pickling liquid cuts through the rich flavor of the mayonnaise and the Mexican crema.
Salt And Pepper: Salt and Pepper enhance the other flavors of the pasta salad.
Mayonnaise: Mayonnaise gives the pasta salad a rich and creamy texture.
Mexican Crema: Mexican crema is a thick sour cream that gives the salad an extra creamy flavor. It is like a hybrid of American sour cream and French Crème Fraiche. However, if you cannot find Mexican crema, you can simply use sour cream.
Yellow Mustard: Yellow mustard adds a zippy flavor and helps to cut through the rich flavor of the mayonnaise.
