Strawberry Honey Avocado Toast

Mashed avocado over toasted bread is one of my favorite breakfasts. Top it with different veggies, strawberries or salmon. There is nothing more delicious than this simple recipe.

Ingredients
  

  • 3 ripe avocados½
  • 1/2 lemon juice
  • 5-6 strawberries, thinly sliced
  • honey for drizzling
  • ¼ cucumber, thinly sliced
  • 2 slices smoked salmon
  • 2-4 large pieces Italian bread, toasted
  • Fresh herbs (such as dill or basil), for garnish
  • Salt and freshly ground pepper, to taste

Instructions
 

  • In a small bowl, mash one avocado with the lemon juice until smooth. Season with salt and pepper to taste.
  • Thinly slice the remaining two avocados.
  • Spread the mashed avocado evenly over one slice of toasted Italian bread.
  • Arrange the thinly sliced strawberries on top of the mashed avocado. Drizzle with honey for a touch of sweetness.
  • On the second slice of toast, lay out the thinly sliced avocado. Add the cucumber slices and smoked salmon on top, creating an even layer.
  • Garnish the salmon and cucumber side with fresh herbs, adding a burst of flavor and color.
  • Season both slices of toast with a pinch of salt and freshly ground pepper, according to your preference.
