This pineapple hibiscus juice is fruity, refreshing, and beautifully colorful. Sweet pineapple balances the slightly tart flavor of Jamaica, while cinnamon adds a warm note that makes the drink a little more special.
Prep: Peel the pineapple. Cut half into pieces for blending and dice the remaining half into small cubes for adding to the finished drink.
Prepare the Jamaica: Bring 2 cups (500 ml) water to a boil. Add the dried hibiscus flowers and cinnamon sticks.
Steep: Once the Jamaica is added, remove the pot from the heat. Jessica does not boil it for long. Let it steep in the hot water until it develops a deep red color and plenty of flavor.
Blend the Pineapple: Add half of the pineapple to a blender with the remaining 2 cups (500 ml) water. Blend until smooth.
Strain the Pineapple: Pour the blended pineapple through a strainer to remove the pulp and create a smoother juice.
Combine: Strain the Jamaica mixture if needed, then combine it with the pineapple juice.
Sweeten: Add 1 cup granulated sugar and stir until completely dissolved.
Add the Pineapple Pieces: Stir in the reserved diced pineapple.
Chill and Serve: Refrigerate until very cold, then serve over ice with some pineapple pieces in each glass.
