Ingredients

  • 2 cups ripe papaya (cubed)
  • cups pineapple (sliced)
  • 1 cup evaporated milk
  • ½ cup full-fat coconut milk
  • 1 tsp vanilla extract
  • A pinch of cinnamon

Instructions

  • First, prep your fruit by peeling, slicing, and measuring out the papaya and pineapple. Make sure both are ripe. This brings out the natural sweetness and rich flavor.
  • Next, add the papaya, pineapple, evaporated milk, coconut milk, vanilla extract, and a pinch of cinnamon to a blender.
  • Then, blend on high until the mixture is smooth and creamy. If you'd like your popsicles a little sweeter, feel free to taste and add a drizzle of honey or agave syrup, but usually, the fruit does all the work.
  • Finally, pour the mixture into your popsicle molds, leaving just a little space at the top for expansion.
  • Gently tap the molds on the counter to remove air bubbles, then insert the sticks.
  • Freeze for at least 6 hours or overnight, until completely solid.
  • To release the popsicles, run warm water over the outside of the molds for a few seconds and gently pull them out.
