First, gather and prepare your fruit. Slice the papaya and kiwi, removing any seeds or tough skin. The riper the fruit, the sweeter and more flavorful your popsicles will be.
Next, add the papaya, kiwi, evaporated milk, almond milk, and vanilla extract to a blender.
Blend on high until the mixture is smooth and creamy. It should have a thick, velvety texture and a golden-green hue from the fruit.
Then, carefully pour the blended mixture into popsicle molds. Tap the molds gently on the counter to remove any air bubbles.
Insert the popsicle sticks and place them in the freezer.
Finally, freeze the popsicles for at least 6 hours, or overnight if you can.
When you're ready to enjoy, run warm water over the outside of the molds for a few seconds to help release them with ease.
