2 Avocados 4 Eggs Salt to taste pepper to taste 4 teaspoons Parmesan cheese grated 2 tablespoons Parsley freshly chopped
Preheat oven to 400°F / 200°C.
Slice the avocados in half and remove the pits.
Place the avocado halves on a casserole dish or baking sheet pan and scoop out some of the flesh to make a bigger hole.
Crack one egg into each hole - better to crack the eggs in a small bowl and then transfer it to the avocado. Season with salt and pepper.
Top with parmesan cheese and bake for 15-25 minutes or until yolk reaches desired consistency.
Sprinkle with fresh parsley, as desired. Enjoy!
