BAKED EGGS IN AVOCADO

Ingredients
  

  • 2 Avocados
  • 4 Eggs
  • Salt to taste
  • pepper to taste
  • 4 teaspoons Parmesan cheese grated
  • 2 tablespoons Parsley freshly chopped

Instructions
 

  • Preheat oven to 400°F / 200°C.
  • Slice the avocados in half and remove the pits.
  • Place the avocado halves on a casserole dish or baking sheet pan and scoop out some of the flesh to make a bigger hole.
  • Crack one egg into each hole - better to crack the eggs in a small bowl and then transfer it to the avocado. Season with salt and pepper.
  • Top with parmesan cheese and bake for 15-25 minutes or until yolk reaches desired consistency.
  • Sprinkle with fresh parsley, as desired. Enjoy!
