
These Creamy Papaya Pineapple Popsicles are made with ripe tropical fruit, coconut milk, and a hint of vanilla for a smooth, refreshing summer treat.
First, prep your fruit by peeling, slicing, and measuring out the papaya and pineapple. Make sure both are ripe. This brings out the natural sweetness and rich flavor.
Next, add the papaya, pineapple, evaporated milk, coconut milk, vanilla extract, and a pinch of cinnamon to a blender.
Then, blend on high until the mixture is smooth and creamy. If you'd like your popsicles a little sweeter, feel free to taste and add a drizzle of honey or agave syrup, but usually, the fruit does all the work.
Finally, pour the mixture into your popsicle molds, leaving just a little space at the top for expansion.
Gently tap the molds on the counter to remove air bubbles, then insert the sticks.
Freeze for at least 6 hours or overnight, until completely solid.
To release the popsicles, run warm water over the outside of the molds for a few seconds and gently pull them out.
