Start by preheating your frying oil or air-fryer. For both, you can heat the oil until it has reached 380ºF (190ºC).
Make the Cajun spice mix. Combine all of the spices and herbs and mix them well so the flavors are evenly distributed. Set it aside.
Next, prepare the corn. Remove the husks and take off any stringy pieces.
Cut each ear of corn into 4 pieces. If you have very large pieces, you can cut them into more or smaller sections.
Once the oil is heated, add two to three pieces of corn at a time. Leave them to fry for about 2-4 minutes or until they are crispy and golden brown in color.
Remove the corn from the oil and leave them to drain on a couple of pieces of paper towel. Repeat the process with all of the corn pieces.
When the corn is drained of excess oil, place it in a large mixing bowl. Drizzle it with butter and add the Cajun seasoning mix. Give the pieces a good toss so that they are covered well.
Serve your fried corn immediately while they are still hot.
