First, start with the syrup. Place the sugar and water in a small saucepan and bring to a simmer. Stir so that the sugar dissolves completely.
Then cut the passion fruits in half, scoop out the seeds with a spoon, and collect them in the prepared small bowl. Add it to the saucepan and cook under medium heat for 10 minutes.
Then put it on the side and let it cool. After it is cooled down, refrigerate it.
Take a big jug, add the freshly squeezed lemon juice and passion fruit syrup, and stir it well together. Then add a lot of ice and top it up with some water (sparkling water or still water).
If you use still water, you can leave it for several hours in the fridge. If you use sparkling water, make sure to add the water just before serving the lemonade.
