I hope you enjoy this Orange Cake recipe as much as I do!
Preheat oven to 340° F / 170° C. Grease a bundt pan with butter or cooking spray and set aside.
Whisk the egg and the sugar until light and fluffy in a large bowl. Add the oil, 3/4 cup of orange juice, vanilla extract, and whisk until well combined.
Gradually sift in the flour, cornmeal, baking powder, and salt. Stir until well combined.
Add the orange zest and stir until well combined.
Pour the batter into the greased bundt pan and bake for 30-40 minutes, or until a toothpick or cake tester comes out clean when inserted into the center of the cake.
Take it out of the oven and let it cool down. Drizzle 3-5 tablespoons of fresh orange juice over the cake and let it cool down. You can also poke a few tiny holes into the top of the freshly baked cake using a toothpick. Then, drizzle a little more orange juice over the cake and let it soak in.
In the meantime, prepare the glazing. Mix powdered sugar with 3 tbsp of orange juice or water until desired consistency is achieved.
Pour the glazing over the cake and allow it to sit for a bit before serving. Grate a little orange zest on top for decoration, if desired. Serve warm or at room temperature. Enjoy!
