This Orange Cake recipe is simple, delicious, and light. It's a perfect dessert for any occasion! Ingredients
 
 

  • 2 Eggs
  • ¾ cup Sugar
  • ¼ cup Vegetable Oil
  • 1 ¼ cups Orange juice, devided
  • 1 tsp Vanilla extract
  • 1 1/2 cups All-purpose Flour
  • cup Yellow Cornmeal
  • 1 tsp Baking Powder
  • ¼ cup Powdered Sugar

Instructions
 

  • Preheat oven to 340° F / 170° C. Grease a bundt pan with butter or cooking spray and set aside.
  • Whisk the egg and the sugar until light and fluffy in a large bowl. Add the oil, 3/4 cup of orange juice, vanilla extract, and whisk until well combined.
  • Gradually sift in the flour, cornmeal, baking powder, and salt. Stir until well combined.
  • Add the orange zest and stir until well combined.
  • Pour the batter into the greased bundt pan and bake for 30-40 minutes, or until a toothpick or cake tester comes out clean when inserted into the center of the cake.
  • Take it out of the oven and let it cool down. Drizzle 3-5 tablespoons of fresh orange juice over the cake and let it cool down. You can also poke a few tiny holes into the top of the freshly baked cake using a toothpick. Then, drizzle a little more orange juice over the cake and let it soak in.
  • In the meantime, prepare the glazing. Mix powdered sugar with 3 tbsp of orange juice or water until desired consistency is achieved.
  • Pour the glazing over the cake and allow it to sit for a bit before serving. Grate a little orange zest on top for decoration, if desired. Serve warm or at room temperature. Enjoy!
