Mulan Breakfast Porridge Recipe (Congee)

Ingredients
  

  • 1 cup raw long-grain white rice, rinsed
  • 7 cups chicken stock, vegetable stock, or water
  • 1 small knob ginger, peeled and thinly sliced
  • 4 slices bacon
  • 4 small eggs
  • Salt and pepper to taste

Instructions
 

  • Wash the rice 2-3 times, and make sure to properly discard the starchy water. Then soak the rice for 1 hour.
  • Once the rice is rinsed, add it to a pot with chicken stock, ginger, and salt. Bring the pot to a boil over high heat then reduce the heat to low and Stir occasionally to ensure that the rice does not clump together or stick to the bottom. Simmer for about 30 minutes or until the rice is thick and creamy. 
  • When the rice is almost done, prepare the bacon and eggs. Fry the bacon in a pan on the stove. Once finished, remove the bacon and fry the eggs over easy in the bacon fat.
  • To assemble the bowls, place 1 cup of cooked rice into a bowl. Top with 2 fried eggs for the eyes and a piece of bacon for the mouth. Season with salt and pepper, to taste.
