1cupUnsalted Butter (softened to room temperature)
1 ¼ cupPacked Brown Sugar
½cup White Granulated Sugar
2Large Eggs (room temperature)
1Tbsp Corn Syrup
2tspPure Vanilla Extract
2 ½cups All-Purpose Flour (sifted)
1cup Unsweetened Cocoa Powder (sifted)
2tsp Cornstarch
1 ½tsp Baking Soda
1tsp Salt

Cold Hot Fudge Sauce
¼ cup Powdered Sugar (for sifting)
Instructions
Prepare the Cookie Dough:
Start by preheating your oven to 350ºF (180ºC) and lining a baking sheet with parchment paper.
In a large mixing bowl, blend softened unsalted butter, packed brown sugar, and white granulated sugar until the mixture becomes light and fluffy.
Then add eggs, one at a time, mixing until well incorporated after each addition. Blend in corn syrup and vanilla extract until the mixture is smooth and homogenous.
Next, sift in all-purpose flour, cocoa powder, cornstarch, baking soda, and salt. Carefully fold them into the wet mixture, avoiding overmixing, until a thick, rich chocolate dough forms.
Form and Fill the Cookies:
Using a 2-inch scoop, allocate scoops of dough on the prepared baking sheet, ensuring they are spaced about 2 inches apart.
Create wells in each dough scoop, using the backside of the scooper and molding the sides gently to achieve a deeper, rounded shape.
Fill the wells with the frozen hot fudge sauce, using a teaspoon and filling about ¾ of the way full.
Seal the cookies; pinch the dough over the top of the filling, adding extra dough if needed, to ensure the hot fudge sauce is completely encased.
Baking and Finalizing:
Place the cookies in the preheated oven, and bake for 12-14 minutes or until the cookies are just set but still soft in the middle.
Once out of the oven, allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Sift powdered sugar over the cookies while they’re still warm.
