Mini Christmas pancakes are extremely fun, easy, and colorful treats to make this festive season. They are very versatile in the way you serve them and they even store well!
To start, combine the flour, white sugar, baking powder, and salt in a large mixing bowl. Mix the ingredients well to ensure they are evenly distributed.
Then, add the cooled melted butter and a large egg. Also, add 1 1/2 cups of milk.
Gently mix the ingredients together until you have a uniform batter. There will most likely be a couple of lumps, which is not a problem!
You can adjust the consistency of the batter by adding more milk to make it runnier. The batter should be pipeable. So obviously, that means that it shouldn't be extremely thick.
Color the pancake batter
Divide your batter into four equal portions.
One bowl of batter can be colored red, the second one green, and the third bowl yellow. The final bowl can be left uncolored to make "white" pancakes.
Next, leave the pancake mixtures to rest for 10 minutes. This will help remove the lumps, tenderize the flour, and help develop the flavor.
Give the mixtures a gentle stir before placing them into chefs' piping bottles (squeegee bottles) or piping bags.
Cook the mini Christmas pancakes
Heat a non-stick frying pan over medium heat. Add a droplet of oil and spread it around with paper towel.
Once it's heated, make a bunch of tiny droplets with each colored pancake mixture. The droplets can literally be 1/2-inch big.
Allow the mini pancakes to cook for about a minute or until they are browned on one side.
Flip them over and leave them to cook for another minute on the other side.
Once they are all cooked, remove them from the heat and set them aside.
Repeat the process until all your batter has been used.
Finally, you can combine all of the colors and place some into a bowl. Serve the mini Christmas pancakes with cut fresh blueberries and milk.
