EASY MINI TIRAMISU

Effortless and easy tiramisu of creamy mascarpone and coffee-soaked ladyfingers, yet glamorous in their pretty individual portions, try this recipe for your next dinner party!

Ingredients
 
 

  • 2 cups Heavy cream
  • ¾ - 1 cup Sugar depending on how sweet you like it
  • 1 ½ teaspoons Vanilla extract
  • 2 cups Mascarpone
  • 1 Pack lady fingers
  • 2 Shots espresso
  • ¼ cup Cocoa powder to dust

Instructions
 

  • Pour the heavy cream into a mixing bowl and beat on medium speed with an electric mixer (or use a stand mixer).
  • Slowly add the sugar and vanilla and continue to beat until the cream forms stiff peaks.
  • Add the mascarpone cheese and fold together until just combined. Set aside. Pour the coffee into a shallow bowl.
  • Dip the ladyfingers in the coffee (don't soak them - just quickly dip them on both sides to get them wet) and lay them in a single layer on the bottom of 10 individual glasses - you may have to break them up.
  • Smooth half of the mascarpone mixture over the top. Add another layer of dipped ladyfingers.
  • Smooth the remaining mascarpone cream over the top. Dust generously with cocoa powder (I use a fine mesh strainer to do this). Refrigerate for at least 3-4 hours or overnight before serving.
