In a large bowl, sift the flour, baking powder, salt, cinnamon, and sugar.
Mix the milk, eggs, melted butter, and vanilla extract in another bowl.
Make a well in the middle of the flour mixture and pour in the wet ingredient mixture.
Mix, but not too much, as your batter should be a bit lumpy.
Divide the pancake mix into 4 small bowls. Add 2-3 drops of food coloring to each bowl, mix, and add more if you want them to be more vibrant.
Heat a large skillet over medium heat and add a little butter.
Once the butter is melted, pour ¾ cup of pancake batter onto the preheated skillet.
When bubbles start appearing on the top of the pancake batter after about 2-3 minutes, flip it over and cook for another 2 minutes.
Repeat the cooking procedure with the remaining batter.
Serve immediately in a colorful stack and top with whipped cream and sprinkles.
