My quick and easy Christmas pancake recipe to enjoy as a family! Kids will love the fun and festive multi-colored pancake stack, perfect for a Christmas Day breakfast!

Ingredients
  

  • 2 ¾ cups All-purpose flour
  • 4 teaspoons Baking powder
  • ½ teaspoon Salt
  • ½ teaspoon Cinnamon
  • ¼ cup Sugar
  • 2 cups Whole milk
  • 2 Eggs
  • 5 tablespoons Melted butter
  • 1 teaspoon Vanilla extract
  • 4 drops Food colorings 2 drops of each
  • Whipped cream and sprinkles for garnish

Instructions
 

  • In a large bowl, sift the flour, baking powder, salt, cinnamon, and sugar.
  • Mix the milk, eggs, melted butter, and vanilla extract in another bowl.
  • Make a well in the middle of the flour mixture and pour in the wet ingredient mixture.
  • Mix, but not too much, as your batter should be a bit lumpy.
  • Divide the pancake mix into 4 small bowls. Add 2-3 drops of food coloring to each bowl, mix, and add more if you want them to be more vibrant.
  • Heat a large skillet over medium heat and add a little butter.
  • Once the butter is melted, pour ¾ cup of pancake batter onto the preheated skillet.
  • When bubbles start appearing on the top of the pancake batter after about 2-3 minutes, flip it over and cook for another 2 minutes.
  • Repeat the cooking procedure with the remaining batter.
  • Serve immediately in a colorful stack and top with whipped cream and sprinkles.
