5-8tbspwater, icy cold
For the apple pie filling
9tbspsalted butter
4tbspcake flour
5tbspwater
3/4cupgranulated white sugar
2 1/2poundsGranny Smith apples, peeled, cored, and sliced
2tspground cinnamon
3/4tspground nutmeg
1/2 tspground allspice
1/8tspground cloves
1large egg, beaten
1tbspmilk
Instructions
Make the pie dough
Place half of the flour into the food processor or a bowl. Then, add all of the caster sugar and salt. Give the dry ingredients a quick pulse or stir so that they are uniformly mixed.
Then, add the cubed cold blocks of butter. Work the ingredients together for 15-20 seconds. The mixture should form a paste or dough. You shouldn't have any uncoated flour pieces.
Scrape down the sides of the bowl so that the butter-flour mixture is together.
Next, add the remaining half of the flour. Give the ingredients a couple of pulses. A coarse crumbly mixture will form.
Transfer the crumbs to a large mixing bowl.
Using a rubber or silicone spatula, drizzle five tablespoons of icy water over the crumbs. Work the water into the crumbs by folding the crumbs over themselves.
If your dough is still very crumbly and doesn't come together, add another tablespoon of icy water at a time. Continue pressing the dough until it is combined and smooth.
Shape the dough into two evenly-sized flat discs and wrap each with plastic wrap. Then, rest them inside the fridge for 1 hour.
Make the apple pie filling
Melt the butter in a saucepan. Once melted, remove the saucepan from the heat and whisk in the flour.
Next, slowly add the water in a thin stream while whisking constantly. The thick flour paste will become runnier. Don't add more water until the current flour mixture is completely smooth.
Once all of the water is in, whisk in the sugar.
Over medium-high heat, bring the mixture to a boil. Once boiling, reduce the heat slightly and allow the mixture to simmer for about 3 minutes. Whisk frequently.
Remove the sauce from the heat and set it aside.
Next, add your sliced apples to a large bowl. Drizzle the spices over the apples and give them a toss. Make sure the apples are well coated.
Pour the butter-sugar sauce over the seasoned apples. Stir the mixture well so that everything is well combined.
Set the apple filling aside to cool completely.
Shape the pie crust
Preheat your oven to 360ºF (180ºC). After 1 hour of resting time, remove the dough from the fridge.
Sprinkle some flour over a flat work surface. Roll out one disc into a 12-inch disc. The other can be 1-inch bigger than the diameter of your pie dish. Make sure it's even in thickness.
Take one sheet of rolled-out pastry and carefully put it inside your pie dish.
Press the dough (gently) into the corners and fluted edges. There shouldn't be any gaps or air pockets.
Dock the bottom of the pie crust very well with a fork.
Assemble your Disney apple pie
Add your cooled apple filling to the pie dish. You can roughly add it in or beautifully layered the apples.
Then, add the second sheet of dough over the filled pie dish.
Fold the edge of the top dough sheet underneath the edges of the bottom sheet of dough. Press them together to form a seal.
Crimp the edges of the dough to create a beautiful rim. Then, cut out a tiny circle on the top. It will be the steam hole.
Rest the pie in the fridge for 20 minutes.
Bake the Snow White apple pie
Whisk together the large egg and milk in a small bowl.
Brush the entire pie dough (that's visible) with egg wash.
Bake your pie for roughly 35-45 minutes, or until the apples are soft and the dough is completely cooked through.
Remove your Snow White pie from the oven and allow it to cool for 1 hour at room temperature.
