Breakfast empanada recipe is very easy and extremely versatile. You can play around with the filling ingredients and make a large batch for future use.

INGREDIENTS

For the empanada filling – Medium tomato – Baby spinach leaves – Cheese – Large eggs – Sea salt – Freshly ground black pepper

First, prepare the ingredients. You can cut the tomato into wedges and remove the seeds. Chop the baby spinach leaves and grate the cheese.

Next, beat together the 4 eggs in a large mixing bowl.

Add all of the chopped fillings (tomato, spinach, and cheese) and fold them in very well.

Can you make empanadas in an air-fryer?

You may bake the empanadas for a slightly shorter amount of time, around 15 minutes usually.

Are empanadas better fried or baked?

Baking is probably better. You still get a crispy texture to some degree.
