BAKED EGGS IN AVOCADO

Ingredients
  

  • 2 Avocados
  • 4 Eggs
  • Salt to taste
  • pepper to taste
  • 4 teaspoons Parmesan cheese grated
  • 2 tablespoons Parsley freshly chopped

Instructions
 

  • Preheat oven to 320°F / 170°C.
  • Slice the avocados in half and remove the pits.
  • Place the avocado halves on a casserole dish or baking sheet pan and scoop out some of the flesh to make a bigger hole.
  • Crack one egg into each hole - better to crack the eggs in a small bowl and then transfer it to the avocado. Season with salt and pepper.
  • Top with parmesan cheese and bake for 15 minutes or until yolk reaches desired consistency.
  • Sprinkle with fresh parsley, as desired. Enjoy!

Notes

You can scramble the eggs in your avocado boat instead of having them sunny side up style.
If your avocados are small, you can only put into each holes the egg yolk and just do an egg white scramble separately to avoid overflowing in your avocados.
To avoid your avocados from falling over and spilling the eggs, cut a flat but under the avocado so it stays stable.
Another option so your avocados won't fall over is to put your avocado boats in a a casserole dish or muffin tin instead of a baking sheet.
When making this recipe, it's best to use large avocados that are just bout to ripe.
Try adding a sprinkle of cayenne pepper or red pepper flakes to add a bit of a kick to this dish.
Instead of parsley, you can top the baked eggs in avocado with chives or cilantro for a bolder flavor.
You can swap parmesan with crumbled feta or gouda cheese.
