Quinoa Salad

Keesha's Tropical Couscous Salad

If you are looking for a fresh and simple tropical dish then this quinoa salad is just the right choice! Full of healthy and colorful ingredients, it is ideal as appetizer, side dish or full meal.

Ingredients

  • 1 Cup White Quinoa
  • 1 Cup Red Quinoa
  • 1 Cup Cherry Tomatoes
  • 1/2 Cup Chickpeas
  • ½ Cup Carrots
  • ½ Pomegranate
  • 1/4 Cup Radishes
  • Dressing:
  • Argon Oil
  • Salt
  • Pepper
  • Lemon

Instructions

Rinse the quinoa under cold running water in order to reduce bitterness

Put it into a pan and add double the amount of water

Bring to boil at medium heat

Reduce to a simmer for 10 to 20 minutes, remove the pot from heat, cover it up and let the quinoa steam for 5 more minutes

Cut all vegetable in the desired size and put them into a large salad bowl with the cold quinoa

Add the dressing

Mix all well together and serve with lettuce
