Ingredients

  • 2 ripe plantains
  • 2 tablespoons white sugar
  • 1 cup all-purpose flour
  • 2 tablespoons baking powder
  • ½ teaspoon cinnamon
  • 1 1/2 teaspoons vanilla sugar
  • 2 eggs
  • 1 cup coconut milk
  • ¼ teaspoon salt

Instructions

Peel the plantains and cut them into slices

Add the white sugar and mash it with a fork or potato masher

Set it aside

In a bowl mix the flour, vanilla sugar and cinnamon well together

Take a larger bowl and whisk the eggs

Add the salt and the coconut milk

Add the dry ingredients from the smaller bowl slowly while whisking the batter

Add the mashed plantains and mix all well together

Heat a non-sticking frying pan or pancake pan over medium heat

Let it cook for few seconds up to a minute until golden brown

Flip them to the other side and cook for few more seconds

Repeat the process with the remaining batter

Serve with maple syrup, honey or any other topping of choice
