Ingredients

  • 100g flour
  • 100g coconut flour
  • 750g sweet potatoes
  • 1 Teaspoon vanilla
  • 4 Tablespoons brown sugar
  • 400ml coconut milk
  • 300ml milk
  • Coconut powder

Instructions

First preheat the oven to 160 °C / 320 °F

Then wash the sweet potatoes and cut them in smaller pieces

Add 1 tablespoon coconut oil and bake it for 35 min or until it is soft

Let the sweet potatoes cool down so it’s easier to peel them.

Make sure you increase the heat in the oven to 180 °C / 355 °F

Mash the pealed sweet potatoes with a potato masher until smooth than add the coconut milk and mix it well together

Add the sifted flour, milk, sugar, vanilla and coconut flour, one after another to prevent any lumps. Stir it until you reach a smooth mixture.

Choose your preferred cake tin and put some butter or oil before filling in the cake mixture

Bake the cake for 45 minutes at 180 °C / 355 °F
