Spinach Rice

Keesha's African Spinach Rice

My spinach rice is a delicious choice for any type of occasion and is also a perfect meal prep option. In addition, it is very easy and quick to prepare. Like most children, I was never a big fan of spinach when growing up. However, Spinach is very low in calories and high in calcium, iron, magnesium and therefore a perfect element for any type of diet.

Ingredients

  • Rice:
  • 2 tablespoon Oil
  • 2 small Onions
  • 1 Tablespoon Curry
  • 2 ½ cups Spinach sauce
  • 2 ½ cups Rice
  • 1 handful of Spinach
  • 1 ½ cups Water
  • 1 cup green peas
  • Spinach sauce
  • 300g spinach
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • ½ cup of water

Instructions

First, mix the spinach, salt and pepper with some water in a blender.

Heat the oil in a pan, sauté the onions until tender.

Add the spinach sauce, curry and cook it for 5 min while stirring regularly.

Add the well washed rice and cook it for 10 min on low heat together with the spinach sauce.

Cook it for 20-30 mins or until the rice has absorbed all the water.

Stir it continuously and check if more water as required.

When the rice is almost finished add the peas and serve the rice with the desired vegetables and meat.

Notes

If you want a healthier version of the recipe than use brown rice and make sure to count at least 15 mins more for the cooking.
