Chia seeds contain many essential nutrients such as protein, omega-3 fatty acids, antioxidants, dietary fiber, vitamins and minerals required for optimum growth and development. Ideally, the chia pudding is stirred together the day before and then left in the fridge overnight. You can vary the standard recipe almost endlessly. Add a different kind of milk, juice, fruit or spice and you will get your own customized flavor. Cold? Warm? It doesn’t matter! I love my chia pudding with coconut milk and any kind of berries.

Ingredients

  • 1/2 cup chia seeds
  • 2 cups coconut milk or any other milk, depending on preference
  • 1 to 2 tablespoons honey
  • 1 Mango
  • Strawberries, Pomegranate or other fruits for topping

Instructions

Mix the chia seeds, coconut milk, and honey together in a bowl or glass jar.

Let it set in the refrigerator overnight.

Remove it from the fridge, and make sure your pudding looks thick and the chia seeds have gelled.

Then cut the mango in small pieces and mix it with the pudding.

Decorate it with fresh fruit or berries.

You can leave it in the fridge for up to 5 days.
