If you are looking for a quick and tasty low carb meal you should try my delicious beef rolls. Together with the mixed salad, it is a light and balanced lunch or dinner option. The reason why the beef rolls are such a hit is because they are so simple to prepare and absolutely healthy. Low in carbs and rich in vitamins, protein and healthy fats, this meal fits into almost any diet plan.

When adapting this recipe to your own, you can use leftover beef and also add avocado for extra creaminess and healthy fats. Also feel free to switch ingredients to suit your needs. If you are vegan, you can switch cheese with avocado and beef with tofu, tempeh or grilled mushrooms.

If you are not a fan of sunflower seeds you can switch these with toasted pumpkin seeds, sesame seeds or chia seeds, all of which are very healthy!

Ingredients

  • 1 Zucchini
  • 200g Beef
  • Parsley
  • 1 Grilled pepper
  • 1 Onion
  • 200g Lettuce
  • 50g Ruccola
  • 1 Carrot
  • 5 Radishes
  • 1 teaspoon Sunflower seeds
  • Coriander
  • Parmesan Cheese
  • Sauce
  • 2 Table spoon olive oil
  • 2 Tablespoon vinegar
  • 1 tablespoon chilli
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

First peel the zucchini in thick strips.

Then prepare the beef marinade and put it over the beef and zucchini.

Add parsley and grilled pepper and form a roll. Close it with a little stick.

Then start frying under medium heat.

Add the onion to it 5 min before it is fully cooked.

In the meantime, prepare the salad. Put all ingredients in a bowl.

Add the sauce and mix it just before the salad is served.

Serve the meat warm and with some onion on the top.
