Thieboudienne rouge is a traditional dish from Senegal made of rice, fish and vegetables. The name originates from the Wolof language and is basically a combination of the words ceeb (rice) and jën (fish). Thieboudienne is considered one of Senegal’s national dishes, although it can be found in other West African countries such as Gambia and Mauritania.

Thieboudienne Rouge

Ingredients

  • 1 Cup peanut oil
  • 2 Onions
  • 2 cloves garlic
  • 1 small green pepper
  • 3 tablespoons tomato paste
  • 0.5 liter Water
  • ½ Cabbage
  • 1 Egg plant
  • 3 Carrots
  • 1 Cassava
  • 3 Okra
  • 2 Habanero chilli
  • 1-piece dried fish
  • 3 pieces sea fish
  • Salt and pepper
  • 2 Seasoning cubes
  • 1 small bunch of coriander
  • 1 yellow bell pepper
  • 3 Cups broken rice

Instructions

First, prepare the fish stuffing. Mix parsley, 2 garlic cloves, shallots, 2 hot peppers, stock cube and salt with a mortar and pestle or a blender and set aside.

Clean the fish and make 2 to 3 deep holes in each piece of fish. Stuff each fish hole with the mixture.

Peel and wash the vegetables.

Heat the Peanut oil, add onions and green pepper and fry it for a few minutes.

Then add the tomato paste and cook at middle heat. Next, add the crushed tomatoes until they are brown.

Add water

Once the water is boiling, add the vegetables and the dried fish and let it cook.

After 10 minutes, add the stuffed fish to the pot. Cook everything for 30-40 minutes.

Take the fish and the vegetables out of the pot.

Mix the onions, tomatoes, garlic, salt and seasoning cube in a blender and then add them to the pot.

Steam the broken rice for 10 minutes and then add it to the pot (make sure there is enough water to cover the rice).

Cook 15 to 25 minutes. Stir occasionally while cooking.

Before serving, add the vegetables and the fish back to the pot and cook for a few minutes.

Prepare a nice plate by placing the rice, the vegetable and the fish in a decorative way.
